Selezione di latte proveniente dai monti Lessini, foraggio da pascolo.
La materia prima è importante, i fermenti sono selettivi e grandi rivelatori della fonte. Grazie al loro contributo ho analizzato marche di latte anche dei comuni centri commerciali delle marche industriali, come era prevedibile e noto da i tempi dell’industrializzazione della produzione del latte e derivati, marche e sottomarche bocciate, le dichiarazioni in etichetta non corrispondono al prodotto finale. Questa analisi mi serviva a stabilire il grado di veridicità e il reale contenuto dei latti commerciati e secondo la comunicazione ricavata dal lavoro dei fermenti, tali bevande sono discutibili, ma non mi dilungo qui su tali disquisizioni.
